There’s Only One Choice….
Did you know that Butcher Boy is the ONLY retail market that carries nothing but Choice and Prime grade meats? The USDA inspects meat for two different reasons, Wholesomeness and Quality/Grade. The wholesomeness inspection is mandatory and all meats sold for consumption go through the process. This inspection ensures that the meat is safe to eat and the process was completely sanitary. Grading is an optional inspection that is paid for by the meat processor to ensure flavor, tenderness and juiciness are rated in each animal.

The three most common grades in markets are select, choice and prime, with prime being the most sought after by meat lovers. Since all of our meats are graded Choice and Prime, you can be guaranteed that it is the best quality available. The USDA grading is the ONLY industry accepted measure of these qualities in meat. Some retailers offer “reserve” or store brand items that do not go through the grading process. These proprietary brands are usually purchased as “no roll” which means that they were never graded for quality so it is unclear what you are paying for.

All of our famous Christmas Rib Roasts are USDA Choice or better, and of course have NOTHING artificial added to them. In fact, this shipment of ribs that we got from Nebraska has some of the best looking marbling we have seen in a while and I would be surprised if it wouldn’t pass for prime grade.
